Chocolate-Hazelnut Ice Cream Sandwiches
Rich chocolate ice cream is coated with toasted hazelnuts and sandwiched between chocolate wafer cookies covered in a chocolate-hazelnut spre.Prep: 25 minutes
Freeze: 3 hours
- 16 chocolate wafers
- 1/3 cup chocolate hazelnut spread
- 1 premium chocolate ice cream
- 1/3 cup chopped toasted hazelnuts
1. Spread flat side of each wafer with hazelnut spread; set aside. Scoop 8 ice cream balls, about 3 tablespoons each; keep in freezer until ready to assemble.
2. To assemble sandwiches, remove ice cream balls from freezer; let stand 1 minute to soften. Place 1 cream ball on each 8 hazelnut-spread wafers. Top with remaining wafers; press gently together.
3. Sprinkle edges with nuts. Place sandwiches on baking sheet lined with waxed paper; freeze 3 hours or until firm. To store, freeze up to two weeks in self-sealing plastic bags. Makes 8 sandwiches.

Bananas Foster Gelato

We've put a summer spin on a time-honored dessert recipe. Serve it with fresh banana slices and warm caramel sauce.- 2/3 cup packed brown sugar
- 5 egg yolks
1/4 tsp. ground cinnamon - 1-3/4 cups whole milk
- 1/4 cup whipping cream
- 2 ripe bananas
- 1 tsp. lemon juice
- 2 Tbsp. dark rum or 1/2 tsp. rum extract
- 1 tsp. vanilla
- Sliced bananas (optional)
- Caramel-flavored ice cream topping (optional)
1. In medium mixing bowl beat brown sugar, egg yolks, and cinnamon with an electric mixer about 4 minutes; set aside.
2. In medium saucepan heat and stir the milk, cream, and 1/2 teaspoon salt until just simmering. Slowly stir about 1 cup of the hot milk mixture into the egg yolk mixture. Return all egg yolk mixture to saucepan. Heat and stir constantly (do not boil) until mixture thickens. Remove pan from heat and place in bowl of ice water; stir 2 to 3 minutes to cool.
3. Mash the 2 bananas with the lemon juice. Stir into thickened mixture along with rum and vanilla (mixture may appear slightly curdled). Transfer to large bowl. Cover; refrigerate overnight.
4. Freeze in 1-1/2- or 2-quart ice cream freezer according to manufacturer's directions. Serve with sliced bananas and caramel topping. Makes about 8 (1/2-cup) servings.

Strawberry Blender Breakfast
Make this fresh fruit drink for breakfast or for a delicious snack, anytime.- 2 cups frozen unsweetened whole strawberries
- 1-1/2 cups milk
- 1/2 cup plain yogurt
- 2 envelopes vanilla-flavored instant breakfast mix
- 2 tablespoons honey
In a blender container combine strawberries, milk, yogurt, breakfast mix, and honey. Cover; blend until almost smooth, stopping the blender and stirring as necessary. Pour into three or four 8-ounce glasses; serve immediately. Makes 3 or 4 servings.

Chocolate-Marshmallow Ice Cream Sandwiches

Ingredients
- 10 miniature caramel Twix bars
- 1 2-layer-size chocolate cake mix
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup water
- 2 cups chocolate ice cream
- 2/3 cup marshmallow creme
1. Unwrap Twix bars; place in resealable plastic bag. Seal and freeze 2 hours.
2. Meanwhile, to prepare cookies, preheat oven to 350 degrees F. In mixing bowl combine cake mix, eggs, oil, and water. Beat with electric mixer until combined. Drop dough by well-rounded teaspoons onto ungreased cookie sheets. Bake about 10 minutes or until tops are set. Cool 1 minute on cookie sheets. Remove cookies; cool completely on wire racks.
3. Spoon ice cream into large bowl. Let stand 10 minutes to soften slightly. Meanwhile, using flat side of meat mallet or a rolling pin, crush frozen Twix bars. Stir into ice cream; return to freezer until ready to use.
4. Spread marshmallow creme on flat sides of half of the cookies; place, creme side up, on a shallow baking pan. Using a small ice cream scoop, place some ice cream mixture onto flat sides of remaining cookies. Place on same baking pan, ice cream side up. Loosely cover and freeze for 2 hours or until firm.
5. Gently sandwich cookies together. Serve immediately or wrap each sandwich in plastic wrap and freeze in freezer container for up to 1 month. Makes about 14 sandwiches.

To take it to a party, tote the syrup, ice cubes, and champagne separately, then combine them at the gathering.- 3 16-ounce packages frozen unsweetened whole strawberries or three 12-ounce packages frozen unsweetened red raspberries, combination of both
- 1 cup sugar
- 3/4 cup honey
- 1/2 cup water
- 1 tablespoon finely shredded lemon peel
- 1/2 cup lemon juice
- 2 teaspoons whole pink peppercorns (optional)
- 1/2 cup fresh sage leaves or 2 tablespoons dried sage, crushed
- 4 to 6 cups ice cubes
- 2 750-ml bottles champagne or two 1-liter bottles club soda, chilled
- Fresh sage leaves (optional)
- Fresh strawberries or raspberries (optional)
1. In a 4-quart Dutch oven combine frozen strawberries, sugar, honey, water, lemon peel, lemon juice, and peppercorns. Cook, uncovered, over medium heat until mixture comes to boiling, stirring frequently. Remove from heat. Stir in sage.Let mixture stand, uncovered, for 1 hour.
2. For syrup, press strawberry mixture through a fine mesh sieve; discard solids (you should have 4 to 5 cups sieved syrup). Syrup may be covered and refrigerated up to 3 days.
3. To serve, combine the syrup and ice cubes. Slowly add champagne. Garnish with additional fresh sage leaves and fresh berries. Makes 14 to 16 servings.

1. For syrup, in blender container combine strawberries and sugar. Cover; blend until smooth. Strain through sieve to remove seeds; place in saucepan. Combine cornstarch and water; whisk into strawberry mixture. Cook and stir until thickened and bubbly. Cook and stir 2 minutes longer. Remove from pan; cool. Makes 2 cups syrup.*
2. To make Stripey Shakes, pour a teaspoon of syrup down sides of glass, using 2 tablespoons total syrup for each glass. Fill glass with cold milk; top with scoops of ice cream.
*Test Kitchen Tip: Store remaining syrup in airtight container in refrigerator up to 2 weeks.

2. To serve, pour the club soda down the sides of the pitcher. Break up the Raspberry Ice (if using) and add to the pitcher or serving glasses. Makes 14 servings.
Raspberry Ice: Add water to a 13x9x2-inch baking pan to a depth of 1/4 inch. Arrange fresh raspberries and strips of lemon peel in the water and freeze until firm. Add more water until the total depth is 1/2 inch and freeze until firm.
